Champagne yeast, huh? Matt and I were talking about what kind of yeast to use last night. I guess cider yeast will make a very dry cider, but I want something a little sweeter, so he suggested using ale yeast. I wonder what would work best...

Of course all this is assuming we get enough apples to even make a few gallons of cider :)

And no, I don't think I got a chance to sample the rose mead. I remember when you lived in Framingham Amanda showed it to me, but it was still fermenting at that time. I'd love to try it.

I've heard that hard cider works well with commercially available champagne yeasts. Did you ever get to sample Amanda's rose mead?

I can see that next year you will have a bounteous harvest, no?

You are certainly more optimistic than I am :) We'll see. Hopefully you'll get a chance to sample some of our produce this year and see what you think.

One thing I think we're going to do this year is take better care of our apple tree so that we can make cider. Of course, the real purpose of making cider is making *hard cider*, because we all know Matt loves his brewing...

Unfortunately, much new england soil is rocky and nutrient poor. Raised beds FTW! Still, there's something to be said for growing food from *your land* and not an artificial land environment, I suppose. I can see that next year you will have a bounteous harvest, no?
